The Truth Behind Every Ingredient
Hi Reader,
This is the first episode of a new Aeviva series called The Truth Behind Every Ingredient.
Each week we take something you use every day and open it up ingredient by ingredient. Foods, drinks, supplements, skincare, and even the over the counter drugs you swallow or put on your skin. Coca Cola, Prime, sunscreen, protein bars, Heinz Ketchup, cold medicines, electrolyte powders, gummy vitamins, anything that goes into or onto your body is fair game.
The goal is simple. We show you what these products are made of, why each ingredient is used, and how it affects your health.
You will also see a quick rating in front of every ingredient.
π’ means generally safe,
π‘ means worth paying attention to, and
π΄ is reserved for ingredients that have strong evidence of risk.
Some ingredients will surprise you. For example, the fizzy feeling in soft drinks comes from carbonic acid, the same compound your body makes during exercise, and many fruit flavours in snacks are precise lab made aroma molecules that mimic ripe fruit with amazing accuracy.
We want clarity, not fear.
We turn labels into simple language, explain the science behind each choice, and give you an honest professional opinion on whether a product supports your health or works against it.
At the end of each episode you can also send us the next product you want broken down. This series grows with your curiosity.
Ben & Jerry's Cookie Dough is a premium ice cream featuring vanilla ice cream loaded with chunks of chocolate chip cookie dough.
It's known for being one of the brand's best-selling flavors and for its generous chunks of edible raw dough.
Fun fact: Ben & Jerry's was founded in 1978 by two childhood friends who took a $5 correspondence course in ice cream making and started their first shop in a renovated gas station in Vermont.

THE INGREDIENTS BREAKDOWN

π‘ Cream (Milk) (27%)
The rich, fatty component that gives ice cream its smooth, creamy texture. Provides most of the saturated fat content. Contains natural milk proteins and calcium but is high in calories.
π’ Water
Used to adjust consistency and make the ice cream scoopable. Freezes into tiny ice crystals that contribute to texture. Makes up a significant portion of the volume without adding calories.
π΄ Sugar
The primary sweetener listed three times on the label (as sugar, brown sugar, and in condensed milk). Creates the sweet taste and lowers the freezing point for a softer texture.
Each 100ml serving contains 22g of sugar, nearly half the WHO's daily recommendation for added sugars.
π‘ Condensed Skimmed Milk
Milk with water removed and sugar added for sweetness and preservation. Adds creamy dairy flavor while boosting sugar content. Helps prevent ice crystal formation during freezing.
π‘ Wheat Flour (Wheat flour, Calcium Carbonate, Niacin, Iron, Thiamin)
The base of the cookie dough chunks, fortified with minerals and B vitamins. Provides structure to the dough pieces. Contains gluten which gives the dough its chewy texture.
π‘ Brown Sugar
Regular sugar mixed with molasses for deeper flavor and moisture. Used in the cookie dough chunks for that classic chocolate chip cookie taste. Contains trace minerals but is still primarily sugar.
π’ Egg Yolk
Acts as a natural emulsifier to bind fat and water together smoothly. Adds richness and helps create a custard-like base. Provides lecithin, vitamins A, D, and E.
π’ Butter (Milk)
Dairy fat that adds rich flavor to the cookie dough pieces. Contributes to the melt-in-your-mouth quality. Contains fat-soluble vitamins and conjugated linoleic acid (a type of fatty acid).
π‘ Fully Refined Soybean Oil
A neutral vegetable oil used in the cookie dough to replace some butter and reduce costs. Keeps dough chunks soft even when frozen. Highly processed with omega-6 fatty acids.
π’ Egg
Whole eggs used in the cookie dough for binding and structure. Adds protein and helps emulsify ingredients. Provides complete protein with all essential amino acids.
π’ Cocoa Mass
Pure ground cocoa beans that create the chocolate chips in the cookie dough. Contains antioxidants called flavonoids and provides authentic chocolate flavor.
Naturally contains some caffeine.
π‘ Coconut Fat
A tropical saturated fat that remains solid at cold temperatures. Helps chocolate chips maintain their shape in frozen ice cream. Controversial due to high saturated fat content despite plant origin.
π‘ Molasses
A thick syrup byproduct of sugar refining that adds color and distinctive flavor. Used in the brown sugar component. Contains small amounts of iron, calcium, and potassium.
π’ Fat-Reduced Cocoa Powder
Cocoa with most of the cocoa butter removed for a lighter chocolate flavor. Adds color and taste without excess fat. Still contains beneficial antioxidants.
π’ Vanilla Extract
Natural flavoring from vanilla beans that enhances overall taste. One of the few natural, minimally processed ingredients. Contains vanillin and other aromatic compounds.
π’ Stabilisers (Guar Gum, Carrageenan)
Natural thickeners that prevent ice crystals and maintain smooth texture. Guar gum comes from guar beans, carrageenan from seaweed. Keep the ice cream creamy even after temperature fluctuations.
π‘ Pro Tip: The stabilizers are what allow Ben & Jerry's to stay creamy even after partially melting and refreezing, unlike cheaper ice creams.
π’ Cocoa Butter
The natural fat from cocoa beans that makes chocolate smooth and gives it snap. Melts at body temperature for that melt-in-your-mouth sensation. Contains stearic acid, a saturated fat that doesn't raise cholesterol like others.
π‘ Natural Flavourings (Contains Milk)
Extracts from natural sources like vanilla, caramel, or butter that enhance flavor complexity. The exact blend is proprietary. Generally safer than artificial alternatives.
π’ Salt
Enhances sweetness and balances flavors in both the ice cream base and cookie dough. Essential for bringing out the full flavor profile. Used in small amounts.
π‘ Natural Vanilla Flavouring
Additional vanilla extract or vanilla bean components for stronger vanilla presence. Complements the cookie dough flavor. Derived from real vanilla pods.
π’ Emulsifier (Soy Lecithins)
A natural compound from soybeans that keeps fat and water from separating. Improves texture and scoopability. Allows for smoother, more uniform ice cream.
π‘ Butter Fat (Milk)
Pure milk fat separated from butter that adds richness and mouthfeel. Contributes to the premium, dense texture. Contains fat-soluble vitamins.

COMPARISON TABLE
Component | Per 100ml | Full Pint (465ml) | Concern Level |
|---|---|---|---|
Calories | 238 kcal | 1,107 kcal | Very high |

Saturated Fat | 8g | 37g | Nearly 2 days' limit |

π‘ Fun Fact: Ben & Jerry's uses a "late-add" process where cookie dough chunks are added after the ice cream is already churned, ensuring bigger, more satisfying pieces in every pint.
π‘ Did You Know? If you eat the entire pint (which many people do), you'll consume over 1,100 calories and more than 100g of sugar, exceeding two days' worth of recommended added sugar intake.
END SCORE: ββΒ½ (2.6/5 stars)
Health Assessment:
Ben & Jerry's Cookie Dough is an indulgent, premium ice cream loaded with sugar, saturated fat, and calories. While it contains some protein and calcium from dairy, the nutritional negatives far outweigh the benefits. The Fairtrade certification and quality ingredients earn it a slightly higher score than cheaper alternatives, but it's still a treat food, not a nutritious choice.
What it's good for:
Occasional dessert, celebrating special occasions, satisfying intense sweet cravings, sharing with others, supporting Fairtrade farmers.
What it's harmful for:
Weight management, blood sugar control, cardiovascular health, dental health, inflammation, anyone watching saturated fat intake or on a calorie-restricted diet.
Realistic Recommendation:
Limit to twice per month maximum as a special treat. When you do indulge, stick to the suggested serving size (100ml/half a cup) rather than eating from the pint. Consider sharing a pint with 3-4 people. Store remaining ice cream immediately to avoid mindless eating. Not suitable for regular consumption or daily dessert.
