This is the first episode of a new Aeviva series called The Truth Behind Every Ingredient.

Each week we take something you use every day and open it up ingredient by ingredient. Foods, drinks, supplements, skincare, and even the over the counter drugs you swallow or put on your skin. Coca Cola, Prime, sunscreen, protein bars, Heinz Ketchup, cold medicines, electrolyte powders, gummy vitamins, anything that goes into or onto your body is fair game.

The goal is simple. We show you what these products are made of, why each ingredient is used, and how it affects your health.

You will also see a quick rating in front of every ingredient.

🟢 means generally safe,

🟡 means worth paying attention to, and

🔴 is reserved for ingredients that have strong evidence of risk.

Some ingredients will surprise you. For example, the fizzy feeling in soft drinks comes from carbonic acid, the same compound your body makes during exercise, and many fruit flavours in snacks are precise lab made aroma molecules that mimic ripe fruit with amazing accuracy.

We want clarity, not fear.

1. THE INGREDIENTS BREAKDOWN

🟡 Milk Chocolate (Sugar, Cocoa Butter, Chocolate, Skim Milk, Lactose, Milkfat, Soy Lecithin, PGPR)
The outer coating that makes up about 30% of the bar. Sugar is the first ingredient, meaning there's more sugar than actual cocoa. The soy lecithin acts as an emulsifier (a substance that keeps ingredients mixed together) while PGPR reduces the viscosity (thickness) to make manufacturing cheaper.

🔴 Sugar
Appears multiple times in different forms throughout the ingredient list. The primary sweetener that creates the addictive taste. Each fun-size Twix bar contains about 10g of sugar, which is 40% of a child's recommended daily limit.

🟢 Enriched Wheat Flour (Wheat Flour, Niacin, Reduced Iron, Thiamin Mononitrate, Riboflavin, Folic Acid)
The base of the cookie layer, fortified with B vitamins and iron. Provides the crunchy texture and structural foundation. The enrichment process adds back nutrients lost during flour processing.

🟡 Palm Oil
A tropical vegetable oil used in the cookie and caramel for smooth texture and shelf stability. Controversial due to environmental concerns around deforestation. Remains solid at room temperature, which helps maintain the bar's structure.

🔴 Corn Syrup
A liquid sweetener made from corn starch that keeps the caramel soft and chewy. Cheaper than sugar and prevents crystallization. High in empty calories with no nutritional value.

💡 Pro Tip: Corn syrup appears separately from sugar on the label, but together they make up the majority of Twix's weight.

🟢 Skim Milk
Provides the creamy milk flavor in both the chocolate and caramel. Adds calcium and protein, though in minimal amounts. Fat has been removed to control the overall fat content.

🟡 Dextrose
Another form of sugar derived from corn that dissolves quickly. Used to enhance sweetness and improve browning of the cookie. Raises blood sugar faster than regular table sugar.

🟢 Cocoa Butter
The natural fat extracted from cocoa beans that gives chocolate its smooth, melt-in-your-mouth quality. One of the few high-quality ingredients in the bar. Contains beneficial antioxidants.

🟢 Lactose
Milk sugar that adds subtle sweetness and helps with browning. Can cause digestive issues for people with lactose intolerance. Occurs naturally in dairy products.

🟢 Salt
Enhances all the other flavors and balances the intense sweetness. Used in both the cookie and caramel layers. Creates a more complex, satisfying taste profile.

🟢 Cocoa
Provides the chocolate flavor and dark color. Contains antioxidants called flavonoids that may have heart health benefits. The amount used is relatively small compared to the sugar content.

🟢 Soy Lecithin
An emulsifier derived from soybeans that keeps the chocolate smooth and prevents separation. Helps reduce the amount of expensive cocoa butter needed. Generally recognized as safe with minimal health concerns.

🟢 Modified Cornstarch
A thickening agent used in the caramel to achieve the perfect chewy consistency. Chemically altered to withstand heat and maintain texture. Prevents the caramel from becoming too runny or too hard.

🟢 Baking Soda
A leavening agent (a substance that makes baked goods rise) that gives the cookie layer its light, crispy texture. Creates tiny air bubbles during baking. Also neutralizes acidity.

🟡 Artificial Flavor
Lab-created chemicals that mimic natural vanilla and butter flavors. Cheaper and more shelf-stable than real vanilla extract. The exact compounds used are proprietary trade secrets.

🟡 PGPR (Polyglycerol Polyricinoleate)
A synthetic emulsifier made from castor beans and glycerol. Reduces the amount of cocoa butter needed in chocolate production, cutting costs. Some consumers avoid it due to its highly processed nature.
